The first course reflects the essence of autumnal landscapes through a harmonious symphony of flavours. Delight in the nuanced layers where the delicate bitterness of aubergine mingles with the sweet notes of onion and Sake, enriched by the opulent, fatty essence of autumn bonito (returning bonito).


The starter unveils a tableau of autumn’s bounty: aromatic mushrooms and velvety pumpkin, harmonised by the crispy bacon. This dish mirrors the vivid charm of the season, evoking the serene beauty of autumn’s tapestry in every mouthful.


In the pasta course, the spirit of autumn is captured through the interplay of Pacific Saury and ginkgo nuts, rendered with a subtle Japanese sensibility. The intricate depth of Pacific Saury’s flavour is accentuated by the invigorating fragrance of Shiso herb, culminating in a clean, crisp finish.


The swordfish, inspired by the art of tempura, offers a pleasing crunch and is paired with a tapenade of seasonal olives. Here, the rich sweetness of apple and sweet potato, contrasted with the refreshing bitterness of Sudachi citrus, composes a dish that embodies the essence of autumn’s profound lavours.


The main course of Wagyu beef, adorned with autumnal vegetables, symbolises the season’s deepening grace. The sweet shallot sauce elevates the umami of the beef, providing an elegant conclusion to your culinary journey.

The dessert, an homage to autumn’s aesthetics, offers a fitting denouement to a meal imbued with the rich harvest of the season, leaving you with a lingering sense of autumnal reverie.

CHEF’S PROFILE
Kuroda honed his culinary skills at Michelin-starred restaurants in Paris, such as Le Relais Louis XIII and Taillevent. After his return to Japan, he became a sous chef at Shangri-La Hotel Tokyo and cultivated expertise at Aquavit in New York.
