The chef meticulously prepares each bowl right in front of you.
Using a professional eye for detail, the chef beautifully combines a colorful variety of ingredients, primarily seafood, to finish each dish.
Despite its convenient mini-size, this dish showcases the chef’s expertise, offering a taste of Hokkaido’s seas in a presentation that is as pleasing to the eye as it is to the palate.

Hokkaido Chicken Paitan Nyumen
This Paitan Nyumen features a white chicken broth made by slow-simmering Hokkaido chicken.
The rich yet mild broth is packed with concentrated chicken umami for a deep, satisfying flavor.
Pairing it with thin somen noodles allows the soup to coat them perfectly, creating a gentle texture.
