Soya Black Beef Shabu-shabu Style Self-baking Soya Black Beef is Japan’s northernmost brand of beef produced in Wakkanai, Hokkaido. It is served in shabu-shabu style that you can bake the beef on the pan on the table, then have it with vegetables and a sweet and spicy sauce.
Simmered Whelk from Hokkaido Hokkaido whelk is simmered. Enjoy the summer special from Hokkaido’s fishers’ town.
Blue King Crab Teppo Soup This is a Hokkaido specialty that uses blue king crabs caught mainly in eastern Hokkaido and simmered with miso. You can enjoy the taste that is unique to a fishers’ town.
Robatayaki Style Baked Scallops on the Shell Hokkaido scallops are savorily baked with butter and scallop soy sauce.
Gift from the Farm – Today’s Vegetable Ajillo With the cooperation of JA Sapporo and other farmers in Hokkaido, we use fresh vegetables harvested in the season. We prepare ajillo that brings out the natural flavors of the ingredients.
Hokkaido Melon Shortcake A shortcake dessert using red-fleshed melon, a summer special in Hokkaido. The combination of sweet and juicy melon, light sponge cake, and fresh cream enhances the refreshing taste.
Nitori Orchard Blueberry Verrine Verrine made with blueberries from Nitori Orchard. Verrine is a French dessert that comes in a small glass container with beautiful layers. Nitori Sightseeing Orchard in Yoichi Town, Hokkaido is a vast orchard surrounded by nature where you can enjoy the blessings of the seasons.
Nigiri-sushi Our sushi chefs make each piece of sushi by hand. The sushi rice is shaped gently containing air so that it gets loose in your mouth while maintaining the consistency of the rice. The strength of the grip is adjusted according to the texture of the fish so that it comes together when it is placed in the mouth.
Tempura We serve tempura that is fried one by one by our master chef in front of you. The consistency of the batter is adjusted for each ingredient and oil temparature is carefully controlled while heating at the optimal time. Please enjoy it with salt or tempura sauce according to your preference. You can enjoy the aroma and sound that rises over the counter.
