The Shimoda Fish Market boasts Japan’s largest catch of Kinmedai, or splendid alfonsino, all year round. The locals call the golden-eyed fish “Kinme”. It is served as sashimi, boiled in sweetened soy sauce and dried in the sun. Kinmedai is also used in a variety of dishes including western and Chinese cuisine at resutaurants in Shimoda.
